Spicy Chipotle Steak Soft Tacos Recipe

Most recipes for steak taco marinade call for a handful of ingredients, including oil or vinegar, fresh and dried herbs and numerous other seasonings. however, there is one ingredient that delivered everything required, plus some spicy, smoky notes: canned chipotle chille in adobo sauce.

Pureeing the chipotle in a food pro­cessor provides a smooth mixture that nicely coated our flank steak. After half an hour, remove the steak from the puree and cooked it under the broiler. Once cooked and sliced thin, the meat will be flavorful and juicy, and there is no need to rub any oil on it thanks to the bit of sauce still clinging to it.

When garnished with broiled red onions, cilantro leaves, and chunks of avocado, our chipotle steak tacos offered the perfect balance of bright, fresh flavor and rich, meaty bites. The steak is fairly spicy; to make it milder, brush any extra marinade off the meat before broiling. If the surface of the steak begins to scorch before the interior is cooked, adjust the rack away from the broiler element and continue to cook the steak.

Process chipotle and adobo sauce, ½ teaspoon salt, and¼ teaspoon pepper in food processor until smooth, about 15 seconds. Transfer sauce to zipper-lock bag. Trim steak, place steak in bag, seal bag, and toss steak with sauce; let steak marinate for 30 minutes. Slice onions into ¼-inch-thick rounds.

Adjust oven rack 6 inches from broiler element and heat broiler. Remove steak from bag. Place steak and onions on broiler pan top set over aluminum foil-lined broiler pan bottom. Broil, flipping steak and onions as needed, until onions are tender and lightly charred and steak registers 130 to 135 degrees (for medium), about 20 minutes. Transfer steak to carving board and let rest for 5 to 10 minutes.

Place 6 tortillas on baking sheet and place sheet under broiler; broil until tortillas are softened, about 2 minutes, flipping halfway through broiling. Wrap warm tortillas in foil and repeat with remaining tortillas. Halve and pit avocados; cut flesh into ½-inch pieces.

Slice steak thin against grain; transfer steak and any accumulated juices to bowl. Separate onion rings and place in bowl. Toss steak and onions together in bowl and season with salt and pepper to taste. Divide steak mixture evenly among warm tortillas, top with avocado and cilantro leaves, and serve.

This popular fruit has a pale yellow-green flesh that boasts a buttery, creamy tex­ture. Avocado trees do well in tropical or subtropical climates; in the United States, most avocados are grown in California or Florida. You’ll see two main varieties at the supermarket. Hass avocados are more rounded and have dark purplish to black skin that is pebbly, while Fuerte avocados are pear-shaped and have greenish, smooth skin; in the test kitchen, use Hass avocados for their richer, less fruity flavor. Though avocados can be stored on the counter or in the fridge, refrigerate them, which allows them to ripen slowly. In either case, the ripened fruit should be stored in the fridge to extend its shelf life. To test for ripeness, try to flick the small stem off the avocado. If it comes off eas­ily and you can see green underneath it, the avocado is ripe. If it does not come off or if you see brown underneath, the avocado is not ripe yet.
