Creamy Sweet Potato Soup Recipe

This creamy Sweet Potato Soup recipe gets its creamy texture from pureed sweet potatoes and goes perfectly paired with a light sandwich or salad. And, this Creamy Sweet Potato Soup can be prepared in under 15 minutes.

Heat the olive oil over medium-high heat in a large soup pot. Add the onion and celery and saute until tender and translucent.

Add the sweet potatoes, garlic, sea salt, pepper, paprika, thyme, and cinnamon, and saute until the thyme is fragrant and the sweet potatoes begin to become tender at the edges.

Add the stock and reduce heat to low. Cover and simmer for 30 minutes, until sweet potatoes are falling apart.

Transfer the mixture to a high-speed blender (or use an immersion blender) and blend until smooth.

Serve garnished with cheese (if using) and black pepper.

Stock or Water

You can use chicken or vegetable stock, but if you feel like the stock is overpowering the delicate flavor of the sweet potatoes use water.

With or Without Cream?

Cream not only adds additional flavor, but also extra creaminess and a wonderfully velvety texture. You can, however, leave it out if you prefer as the soup is delicious and creamy either way.

Sweet Potato Soup Recipe Ingredients

SERVES 4 TO 6
2 tablespoons extra -virgin olive oil
1 small onion, diced
3 celery stalks, diced
3 to 4 sweet potatoes ( about 2 pounds), peeled and cut into 1-inch cubes
2 cloves garlic, chopped
1 to 2 teaspoons iodized sea salt
1 teaspoon freshly ground black pepper
1 teaspoon paprika
1 teaspoon fresh thyme
1/2 teaspoon cinnamon
4 cups chicken stock or vegetable stock
Parmesan cheese, to garnish (optional)
Extra fresh ground black pepper, to taste

What to Serve with Sweet Potato Soup

Try serving crusty bread on the side for dipping. Serve the soup as a main on its own, or alongside beef, pork, chicken, or black beans. Because it’s rich and creamy, the soup would do well served with a side salad of fresh lettuce greens tossed in a light vinaigrette.
