Chicken Tortilla Soup Recipe

I prefer a Chicken Tortilla Soup Recipe that is rich, zesty, and ultra comforting, with a slightly spicy finish. Here’s how to make Chicken Tortilla Soup to match that description.

MINCE ONIONS

Mince the onion while the chicken browns. Prepare the garnishes (tortilla chips, tomatoes, avocado, and cilantro) while the soup simmers.

HEAT BROTH

Bring broth to boil, covered, in large saucepan and set aside.

SEASON AND BROWN CHICKEN

Meanwhile, pat chicken dry with paper towels, then season with salt and pepper. Heat oil in large Dutch

BROWN ONION AND ADD SEASONINGS

Add onion and ½ teaspoon salt to fat left in Dutch oven and cook over medium-high heat until lightly browned, 3 to 5 minutes. Stir in chipotle, tomato paste, and garlic and cook until frag rant, about minute.

ADD BROTH AND POACH CHICKEN

Turn heat to low and stir in hot broth, scraping up any browned bits. Add browned chicken. Cook, covered, until chicken is cooked through and no longe r pink in center, about 10 minutes. Remove chicken from pot. Increase heat to medium-high
and cook to meld flavors, 5 minutes.

SHRED CHICKEN, SEASON, AND FINISH

While chicken tortilla soup is simmering, shred chicken into bitesized pieces. Off heat, stir in lime juice and season with salt and pepper to taste. Divide tortilla chips, shredded chicken, tomatoes, and avocado among individual bowls. Ladle broth over each bowl sprinkle with cilantro, and serve chicken tortilla soup.
