Stir Fried Shrimp and Snow Peas with Coconut Curry Sauce Recipe

Here are the 4 key steps to making a great stir-fry in a 12′ nonstick skillet.

Start by cooking the protein. If using beef, pork, poultry or shrimp. don’t cook it though completely, but rather remove it from the skillet when it is just shy of being complete cook through and cover with foil to keep warm. The protein will finish cooking when the protein is added tot he vegetables in a warm skillet.

Push the vegetables tot he edges of the skillet, creating spot in the center of the skillet. Add the garlic, ginger and a little oil tot he cleared spot and cook – mashing them into the hot pan using a spatula until they are fragrant, about 30 seconds.

Next, cook the vegetables in batches, adding the tougher vegetables that take longer to cook first and the cook the most most delicate vegetables last. This will ensure that each vegetable will be cooked properly.

Return the cooked protein to the skillet and add the sauce and toss to combine. Continue to cook until the sauce has thickened and the protein is fully cooked.

Mince the garlic and grate the ginger while the vegetables cook.

Prepare sauce and set aside. Toss shrimp with soy sauce. Heat 2 teaspoons of oil in 12-inch nonstick skillet -over high heat until just smok­ing. Add shrimp and cook, stir-ring occasionally and breaking up clumps, until curled and lightly browned, about 1 ½ minutes. Transfer shrimp to clean bowl

STIR FRY VEGETABLES

Add 1-more table- spoon of oil to pan and return to high heat until shimmering. Add bell pepper and cook, stirring occasionally, until crisp-tender, about 2 minutes. Stir in snow peas and bean sprouts and cook for 1 minute.

COMBINE AND SIMMER

Clear center of pan and add remaining 1 teaspoon oil, garlic, and gin­ger. Cook, mashing garlic mixture into pan with back of spatula, until fragrant, about 30 seconds .. Stir in cooked shrimp. Whisk sauce to recombine ‘ add to pan, and bring to simmer. Cook until sauce thickens, 1 to 2 minutes. Serve immediately.

1 Curry sauce
1 Pound extra large ship (peeled and deveined)
2 teaspoons soy sauce
2 tablespoons vegetable oil
1 bell pepper, cored, seeded and sliced
8 ounce’s snow peas, strings removed
1 cup bean sprouts
3 garlic cloves, minced
1 tablespoon grated fresh ginger
