There are three critical elements to a classic Philly Cheesesteak: the right meat, the right bread and the right cheese.
I like to use rib-eye steak or if you really want to splurge use filet mignon and a meat slicer to shave it incredibly thin.
The flavor of rib-eye is incredible but the tenderness of the filet is special.
For the cheese, American or Provolone is preferred, which melts into the steak when placed on top in the hot pan.
For the roll, the choices are sub, hoagie, torpedo and steak rolls.

Philly Cheesesteak Sandwiches Recipe – Rib Eye
For Rib Eye, slice the steak crosswise, with grain, into 3-inch-wide strips.
Using sharp knife, shave frozen steak as thinly as possible – against the grain.
Then mound the Rib Eye on a cutting board and chop coarsely with a sharp knife – 10 to 20 times.

The choices for rolls is broad: sub, hoagie, torpedo and steak rolls.
For a toasted roll, adjust the oven rack oven rack to the middle position and pre-heat the oven to 400 degrees.
Split the rolls open, spread the rolls on a baking sheet, and toast until lightly browned (brush with butter), 5 to 10 minutes.
Philly Cheesesteak Sandwiches Recipe – Process
Heat 1 table spoon oil in 12 inch nonstick skillet over high heat until just smoking.
Add half of meat in even layer and cook, without stirring, until well browned, 4 to 5 minutes.
Stir and continue to cook until meat is no longer pink, 1 to 2 minutes; transfer meat to colander to drain.
Wipe out skillet with paper towels and repeat with remaining 1 tablespoon oil and chopped meat.
Return now empty skillet to medium heat.
Drain excess moisture from meat, return meat to skillet and add ½ teaspoon salt and ¼ a teaspoon pepper.
Cook, stirring constantly, until meat is warmed through, 1 to 2 minutes.
Philly Cheesesteak Sandwiches Recipe – Cheese
Reduce heat to low and lay American cheese or Provolone cheese over top. Let the cheese melt – about 2 minutes.
Fold melted cheese into meat thoroughly.
Divide the mixture evenly among toasted rolls and serve with desired toppings.

8 slices (8 ounces) American cheese
